I’ve made several different recipes for snack mix, but this is my absolute favorite! I might just make it for Christmas when I will be giving most of it away as gifts to the neighbors. I can’t stop eating it – it’s so good!
I like to use large shaved coconut because it’s not as sweet, and it comes in large chunks. But this time I was out of the store, so I just used shredded coconut flakes.
How to Make Sweet Cheek Mix
- Dry ingredients – In a large bowl, stir together the corn chips, golden grahams, coconut and slivered almonds. Sit on one side.
- Simple syrup – Combine corn syrup, sugar, butter and salt in a medium saucepan. Bring to a boil over medium heat. Boil for 2 minutes, stirring often. Let cool for 2-3 minutes.
- together – Pour the sauce over the cereal mixture. Stir until completely coated.
- cold – Spread mixture onto wax paper, parchment, or silicone liners. Allow to cool. Get ready to taste the sweetest Chex Mix recipe of your life!

After the Chex Mix is completely cooled, transfer it to an airtight container. It will last about a week, but it didn’t last that long at my house!
Pro Tips:
- You don’t need to stir the glaze mixture constantly, but do stir it often so it doesn’t burn on the bottom.
- Chilling the sauce for just a few minutes helps keep the grains crisp. When it boils hot, it makes the checks soggy.
- If you use unsalted butter, use 1/8 teaspoon of salt instead of just a pinch.
Variations:
- I prefer to use unsweetened shaved coconut, but shredded coconut works too.
- You can use corn chips instead of rice chips, or a combination of the two. I don’t like wheat chucks for this recipe, but you might.
- Stir in some pretzels broken into bite-sized pieces.
- For a more caramel-flavored snack mix, substitute light brown sugar for all or part of the white sugar.
